Haiti Relief

African Coffees

For all of you who have been begging and pleading, we will finally be
roasting our last few batches of Ehtiopian Idido over the next 2-3
weeks! This coffee has been just amazing, with its succulent blueberry
finish! We have already contracted more of the coffee, and it should be in sometime early next year.

In the meantime, we have two terrific African coffees coming into the roastery late next week. Both these coffees will be for sale at either Sacred Ground,or The Salida Cafe:

FTO Ethiopian Sidamo Natural Process- A highly sophisticated coffee with great body and huge amounts of balanced acidity(brightness). Natural process coffee means the coffee bean was dried inside the coffee cherry, producing wild depth and flavors!

FTO Ethiopian Yirgacheffe- One of my favorite coffees of all time! This coffee always roasts great with notes of cocoa and rosehip. You don’t want to miss it!

On the other side of the world- For all of you that love our FTO Papua New Guinea, we are currently roasting a Papua New Guinea Peaberry that is for sale at both our retail locations. This coffee is very deep, but finishes smooth with a touch of dark chocolate. This is an extremely rare coffee, and we have only a limited supply to roast. For those of you who dont know, a peaberry is a coffee bean that was grown by itself inside the coffee cherry, instead of two side-by-side.

Coming Soon- We will soon begin offering public coffee cuppings and discussions about the roast process at Mountain Phoenix. This will allow you the chance to try all our coffees from a “roasters perspective”, and also to learn about the roast process in general. Watch for an event invite through Facebook in the next few days!

Salida Cafe and Roastery Updates

First and foremost, we finished installing our brand new Fetco Extractor series coffee brewer! This brewer make AMAZING coffee, with the full richness of the coffee present in every sip. The coffee pours into the Latest in airpot technology: Luxus Thermal Carafes with built in timers, pour spouts and drip trays.

With the new brewer, we now also have the brand new coffee express station down at the cafe! Yes, really!! If you are seeking that perfect Mountain Phoenix Roast, but don’t have time for a line, you are welcome to drop your money into the pay jar, grab a cup, and be on your way! This is essentially the same set-up that has been so popular at our Sacred Ground location.

Starting on Monday we will be starting “Double punch Mondays” at the Salida cafe! Stop in on Mondays, grab a coffee or latte, and we will punch your card twice for every one purchase. Also, don’t forget about “Double punch Tuesday”, which happens at our Sacred Ground location.

It was the right time and the right combination of people and opportunity that have led Al Tafoya, Bryan Joslin and Clark Roberts to merge and create another outlet for The Best Coffee in the region. In some ways it has been a very natural evolution, since many of our customers frequent both Sacred Ground and The Salida Cafe. The quality of the products, the attention to the needs of our customers and the philosophies that are shared make this an exciting move for the new partners and a wonderful boost for the community.

We are excited to be able to offer our customers the wonderful food and world class performers that have made The Salida Café and Roastery  (formerly Bongo Billy’s Salida Café) a landmark performing venue and combining with the Mountain Phoenix coffees will only enhance our customers experience.

Musings and brainwaves from the Coffee Roaster

Hello to you All! it’s been a little while since I last wrote, so It’s definitley time to catch you all up on the action here at Mountain Phoenix Coffee Roasters.

Simply put, I have been very, very, very, busy adding new accounts and sourcing some great cofffee for the summer!  As far as new accounts, you can now find our coffee in Salida at the Twisted Cork,  Amicas pizza, as well as The Butchers Table, Me Gusta, Sacred Ground Coffee, and of course, The Country Bounty, our very first account!

Out of Salida, we have added coffee service and exclusive bins at Venture Foods in Divide, Colorado, as well as coffee service at the Cripple Creek location, with Pueblo coming soon! Very exciting stuff! The coffee installations went smooth, and we absolutley loved the staff at both places.

From The Cupping Table:

All our coffees are still cupping out great (of course), but I must admit, I have some favorites right now that are simply some of the best coffees you can by anywhere!

All three are AMAZING coffees right now, and it would be a crime if you miss an opportunity to try one! Currently, I am working on a roast profile for a new Organic Santa Teresa El Salvador coffee, that should be online soon.

At Sacred Ground Coffee, we have also welcomed our newest employee, Jim, who other than forgetting he worked the other day, has been a great joy and addition at the shop. He perfectly compliments Dee, our omni-present general of all things shop related.  Even our operations chief and account guru has upped his game.  Why just the other day, I gave him a package to mail, and he ALMOST took it to the post office before running out of time and giving it back to me! Ha! ha! Seriously, all things have been running super smooth, and it has been such a joy to come into work with Al, Dee and Jim.

That’s about it for now. Of course with summer in full swing, much of my time has also been moved to the tennis court, my other addiction after coffee!

What about the perfect cup at home?

  • Many of our customers at Sacred Ground Coffee Shop want to duplicate the great cup of Mountain Phoenix Coffee they have at our shop. We do go through a rather elaborate process to make certain that our coffee is served at it’s best. We grind the beans, get our filtered coffee to the exact temperature and use the finest brewing equipment available.  And the coffee? Delicious…so our customers and our palates tell us. For most of us it is probably not practical for the average coffee enthusiast to have a Fetco Extractor Brewer in their kitchen or a professional grinder that gets the beans prepared perfectly, but here are some tips that with a little investment will turn a great cup of coffee into a legendary one (well, almost)
  • Use the freshest coffee you can find. At Mountain Phoenix Coffee Roasters we roast in the morning and put it on the shelf at Sacred Ground Coffee Shop by early afternoon.
  • It might sound obvious, but have a good water source, one free from chemicals and other additives.
  • Depending on your taste, two tablespoons of coffee per 8 oz. of water is a good place to start.
  • Use a good brewer. We liked the French Press but I’ve personally used the Moccamaster, a Swiss coffeemaker and have had excellent results.
  • Use a burr grinder to grind your beans. It simply does the best job and there are some affordable models available from companies like Baratza.
  • Once you’ve brewed your coffee, instead of keeping on a warmer, pour it into a carafe that has been heated with hot water and has a screw down top.

Since it is officially spring, we’ve felt a nudge coming from our customers to develop our cold drink menu. Something we do every season, but it seems like it’s coming earlier than it did in years past. We’ve gotten input from friends and co-workers as well as the well traveled visitors who have stopped in on their way some place. There is no end to the possibilities of lip smacking things to drink. The traditional iced coffee/mocha/ lattes already have long lines attached to them, as do our iced-teas and Arnold Palmers. We’ve been experimenting with some great smoothie recipes added fresh, organic carrot and apple juice. It’s a menu that complements our coffee menu wonderfully. What a way to chill in the PM. If you find yourself in the Arkansas Valley stop by Sacred Ground Coffee Shop (Mountain Phoenix Coffee Roasters is right next door) and say hello. We’ve put  tables and chairs out in the garden and there are a few buds clinging to the limbs of the elm tree.

Perfectly Roasted Sumatra Coffee

Here’s a great photo for all you coffee lovers out there. It’s some perfectly roasted Sumatra leaving the roasting hopper.  Sumatra is one of my all time favorites. This Indonesian treat explodes with huge amounts of spicy depth! Sumatra is also an extremely smooth coffee, with low acidity, making  it an almost perfect cup.
